Our newly opened processing facility is up to date and ahead of the game. We have a 4 cabinet system for meat treatment, head wash for carcasses, and spray chilling to cool the  product before packaging.

Our Harvesting Process

1. Hock Cutters
Hock cutters separate the hocks (the lower legs) from an animal carcass.
2. Hock Vaccums
Hock vacuums remove fluids or contaminants after the hock cutters have done their job.
3. rotary air knives
Rotary air knives remove hide without compromising meat, yield loss, hide damage, or unnecessary contamination pockets.
4. electric stimulator
An electric stimulator helps remove hide and keep backs from breaking or tearing meat.
5. hide pullar
The hide pullar removes the skin or hide from the carcass.
6. four cabinets
Our four cabinet system is a set of four distinct chambers for different stages of intervention, like antimicrobial treatment.
7. head wash
The head wash process sprays the head of the carcass in a cleaning or sanitizing solution.
8. spray chill
A spray chill allows for quick and proper cooling of the carcass, and helps with shrink loss.

When should I deliver my animals?
The best time to deliver your animals is the morning they will go through the harvesting process.
What is your no show/cancelation policy?
Cancellations must be done at least a week in advance for us to give your place to someone else. Cancellations put in place during the week before will only receive a 50% refund, and if cancellations are put in place the day of, we will not be able to refund you.
How quick is your turn around time?
We have a fast harvesting turnaround time of 2 days. Further meat processing takes 3-4 days.
Do you process any meats other than beef or bison?
We can do a voluntary inspection of animals, such as elk, to see if we can process the meat.
How far out do I need to schedule harvesting?
Harvesting needs to be scheduled at least 2 weeks out, but can be scheduled as close as 1 week out.
What certifications does Intermountain Packing hold?
We are USDA, Certified Humane, SQF, USDA Organic, EDC, and PAACO certified.
